<p><P><P>Ask guests about their two biggest improvements to Carowinds over the past couple of years, and you will hear about Fury 325 and Harmony Hall. Justifiably, the 325 foot Fury roller coaster is an amazing improvement to the park and quickly rises to the top of many people&#8217;s favorite list, even winning the Best New Attraction Award in 2015 from the Golden Ticket Awards.</p>
<p>We had the first hand experience this past season to visit Carowinds and try many of Executive Chef Kris Siuta&#8217;s amazing creations, not only at Harmony Hall, but throughout the park. There is a reason fans are requesting a Harmony Hall type facility at the other Cedar Fair parks, and it is all based around what Chef Kris has been able to do in such a short amount of time. </p>
<p>One of the first things you will notice when visiting Harmony Hall is the amazing fresh ingredients. Everything from the handmade pizzas to slow cooked brisket to fresh salads are made in house. In addition, there are a wide selection of side dishes available with your meals.</p>
<p>A personal favorite of the CPFB was the broccoli salad, which was light, refreshing, and paired well with a variety of the meals. </p>
<p>Recently a reader reached out to us for the recipe of the Carolina Broccoli Salad, which was slightly different than that served at the beginning of the year. Chef Kris was gracious to able to provide us with the recipe for those looking to make the Carowinds broccoli salad at home.</p>
<p>&#8211; Fresh broccoli florets, blanched<br />
&#8211; Fresh carrots, shredded<br />
&#8211; Fresh onions, julienne<br />
&#8211; Fresh red peppers, julienne<br />
&#8211; Cheddar cheese, shredded<br />
&#8211; Green onions, chopped<br />
&#8211; Cole slaw dressing, Kraft </p>
<p>The quantity of ingredients can be adjusted based on what guests like or do not like. Combine all ingredients together until evenly coated, and refrigerate until ready to serve. </p>
<p>Super easy and a great alternative to other salads you may enjoy. For those on a vegan diet, consider swapping out the Kraft coleslaw dressing with your favorite variety.</p>
