As part of the 2016 renovations to Knott’s Berry Farm, the park will not only get a totally new, retracked Ghost Rider roller coaster, but an enhanced Ghosttown complete with a gold mining experience similar to back during the early days of the park.

Guests visiting during the Christmas holiday season at Knott’s Berry Farm can experience the unique opportunity to have fresh Canadian Maple Lollipops made right in front of your eyes.

While we put plenty of thought into returning to Knott’s Berry Farm to save this sweet Canadian treat, we never really put much thought to making them at home. However, we decided to give it the old best effort try, and boy were we glad when we discovered what happens when you strike Knotts gold at home, the equivalent of liquid gold.

We started with using real pure maple syrup, not the artificial type from Aunt Jemima. We slowly brought the syrup to a boil in a sauce pan, constantly stirring to avoid burning. Once boiling, and again constantly stirring, we cooked the syrup for seven minutes.

In the meantime, with lots of fresh snow in our area, we filled a tray with some fresh powder since it was readily available.

The boiled syrup was then poured over the ice/snow. At this point, if you wish to form them into lollipops, you can insert a Popsicle stick into the syrup, and using another stick, form the syrup around the stick as it hardens.
