We learned our lesson on our last visit to Prospector’s Cantina and opted for the nachos instead of the gluten free burrito. We also took more control over the ‘build’ stage of our ‘build your own nacho’ and skipped the suggested rice.
The base of the meal was built of a decent number of nacho tortilla chips upon which the smoked pork was place, topped with nacho style cheddar cheese. I added salsa sauce, diced tomatoes, shredded lettuce, and as much grated cheese as they would top it off with. The chips tasted freshly fried and had a natural and pleasant salty corn chip taste.
The pork was well smoked, juicy and flavorful, and of adequate portion. The cheddar cheese paired very well with the chips and pork to create a flavorful dish. The ratios of the main ingredients was just right to keep any of the tastes from overwhelming the others. It was very easy to finish off this tasty meal.
