For us, corn on the cob is one of the quintessential food items that helps define summer in America. Parks have been betting big with corn on the cob the past couple years by offering elote, a Mexican street corn roasted over an open grill and coated with salt, chile powder, butter, cotija, lime juice, and mayonnaise or crema fresca. There are several variation of the dish, and they are simply a powerhouse of flavors.
So we were excited to see the new Provisions offer a similar roasted corn on the cob.
A fresh ear of corn is cooked on an open flame grill, drawing out the sugars of the corn and giving it a slight char. After cooking, the corn is covered in drawn butter and then sprinkled with Parmesan cheese.
When we prepare corn on the cob at home, we now only serve it grilled as the flavors are so much more intense. If you have not tried it, we strongly suggest mastering the technique.
The Provisions corn is an easy item to be able to transport and walk around the island, though make sure you bring lots of napkins as the cheese will get everywhere.
The saltiness of the cheese and butter help balance the sweetness of the corn. Though we suggest trying this corn closer to when it is in season, as the one we had early in the season is not quite as sweet as those later on in summer.
Cedar Point is playing it safe with their roasted corn, offering only butter and cheese, which will help appeal to a wide audience, and particular families on the Forbidden Frontier on Adventure Island. However, in the futrue we would love to see them get more adventurous and offer a true elote.
Our big suggestion for those that order the Cedar Point roasted corn on the cob is make sure you turn the corn in the tray to get the cheese distributed on all sides of the corn. Workers tend to just sprinkle it on top at the end.
