We recently had the chance to sit down with Dorney Parks’ Executive Chef Malo Jones and talk about his background and ongoing work with the food inside the park. Chef Jones has an extensive background in working at various venues as well as having learned the about various cuisines from across the country.
Dorney Park opened for 2017 the new Parkside Pavilion with the parks first major dining project in decades. The new kitchen is state-of-the-art and can feed upwards of 6,000 guests at one time with the ability to create almost any type of cuisine requested.
Now that Chef Jones is in his second season at the park, you will start to see more and more of his influence showing up in menu items. Take for example the Smokehouse Barbecue, which features a variety of smoked menu options with chef inspired rubs and sauces with special items thrown in throughout the year.
Or head over next to Possessed to the Chef’s Grille, which features a regular menu, but also chef specials throughout the year.
We are excited to see that Dorney Park is also introducing a Summer Culinary Series throughout July and August that will feature a rotating themed menu that will be worthy of weekly visits to the park.

July 8-9, 2017
Pitmasters Ribfest: All you can eat pork ribs, hamburgers, hotdogs, and sides with a variety of homemade BBQ sauces. You absolutely must ask for and try the chef’s BBQ, as it offers an incredible flavor profile with a slight hint of heat that lingers at the end. We would love to see this sauce bottled and sold in the park!
July 15-16 & 22-23, 2017
Tex-Mex Festival: Build your own chicken fajitas, Mexican hot dogs, and Tex-Mex steak chili. Includes cilantro lime rice, black bean salsa, and more.
July 29-30 & August 5-6, 2017
Hawaiian Luau: Featuring a pig roast, pulled BBQ chicken and pork served with Hawaiian BBQ sauce. Includes Hawaiian chili meatballs, smoked corn, mango pineapple slaw and more.
August 12-13 & 19-20, 2017
Summer Clambake: Includes one clambake bag with clams, mussels, shrimp, corn, potatoes and sausage. Plus all you can eat hamburgers and hot dogs.
Season passholders only pay $12 per person for each of the Summer Culinary Series events. Plus if you already have an All-Season Dining Plan, you can trade one of your daily credits in for only $5!
Regular guests pay $20 while kids and seniors are $5.00.
A special combo admission ticket and Culinary Series meal ticket is $53.
The menu inside Parkside Pavilion is served from 5:30 to 8:00 pm each day of the event.
